Citric acid (E330) occurs naturally in many fruits. It is used to add a tart flavor to products and also has a mild preservative effect. It can be used in products such as marmalade and juice. Along with sugar, the acid helps the fruit's pectin (a gelling agent) to set, giving the marmalade a firm consistency. The recommended dosage is ½ – 1 teaspoon of citric acid per kilogram of berries or liter of juice.
